Introducing Quinoa To Your Kids – Mexican Bean Quinoa

Quinoa is an increasingly popular seed that is used in pilaf, salads, patties, soups and more. It is primarily grown as a grain crop (Chenopodium quinoa) to harvest its seeds. Quinoa is considered a healthier option compared to rice and wheat because of its high protein and high fiber content.  It is also high in various vitamins and minerals such as vitamin-B, vitamin-E, magnesium, iron, calcium, potassium, phosphorous, etc. Lastly, it is a good source of anti-oxidants and a popular gluten-free option.

Most kids like to stick to familiar food items and are hesitant to try new types of foods. Since, Indian diet traditionally uses wheat and rice as staple food it is often hard to introduce other options to kids. Hence, I started experimenting to see what recipes, that kids already love, can be made using superfood Quinoa. I came up with several good recipes, but here I am sharing a recipe that has always worked for me because kids love Mexican flavors.

Mexican Bean Quinoa is like a Mexican version of fried rice that is very easy and quick to make. All you need is handful of chopped colorful vegetable and any type of beans. First cook the quinoa according to the instructions and then stir-fry it with vegetables and beans. Feel free to further customize with you own spices and choice of vegetable as per your kids liking. Hope your kids like it too.
